Chestnut and Coffee Cheesecake

Ingredients:

 

     For the Base:

  • 60 g melted butter
  • 200 g oat biscuits

 

     For Filling:

  • 300 g labneh cheese at room temperature
  • 200 g unsalted curd cheese at room temperature
  • 115 g granulated sugar
  • 500 g chestnuts
  • 2 large eggs
  • 1 cup of milk
  • 1 teaspoon of vanilla essence
  • 2 tablespoons of granulated coffee

 

     For toppings:

  • Candied chestnut
  • Chopped chestnuts

 

     Preparation:

  • Peel the chestnuts that you boiled until they got soft.
  • Mix the chestnuts you have peeled with coffee and milk and make a puree.
  • Add butter to the oat biscuits that you ground in the food processor and mix the ingredients.
  • Pour the biscuit mixture into a 22 cm diameter springform pan on which you have laid out the greaseproof paper.
  • Leave the flattened base to cool in the freezer.
  • Whisk the labneh and curd cheeses until they have a creamy consistency.
  • Add the egg, granulated sugar, and vanilla essence and continue beating.
  • Add the coffee chestnut puree.
  • Beat for another 2-3 minutes, and pour over the biscuit base.
  • Put a bowl of water in the preheated oven at 170 degrees and bake the cheesecake for about 50-60 minutes.
  • You can serve the dessert after resting in the refrigerator for a while.

 

Chestnut Pie

Ingredients:

 

     For dough:

  • 1 pack of all-purpose flour
  • 2 eggs
  • 100 g soft butter

 

     For toppings:

  • 20 chestnuts
  • 1 pack of cocoa powder
  • 3.5 teacups of milk
  • Cracked walnuts

 

     Preparation:

  • Mix the flour and the cocoa powder.
  • In the middle of the mixture, add the butter, egg, powdered sugar, and water.
  • Divide the kneaded dough into six equal parts.
  • Roll out the dough into small circles and place them in tart tins.
  • Make small holes in the dough.
  • Place small greaseproof papers on the dough and place weights on top of the papers. In this way, the shape of the dough will be flatter.
  • Bake in a preheated 180-degree oven for about 25 minutes.
  • Take the weights off the dough.
  • Bake the dough for another five minutes.
  • Let the tarts that have changed color cool down until they are at room temperature.
  • Squeeze the mashed candied chestnut and cream on top of the tart.
  • You can garnish them with walnuts and serve them.

 

Chestnut Parfait

Ingredients:

  • 200 g melted milk chocolate
  • 250 g chestnuts
  • 100 g biscuits
  • 450 ml cream
  • 50 g dark chocolate

 

     Preparation:

  • Boil the chestnuts and mash them.
  • Place a cling film in the container you have cooled with cold water.
  • Mix the chocolate, chestnut puree, and biscuit.
  • Add the cream and mix well, then pour it into the container.
  • Freeze the ingredients for about four hours.
  • Remove 20 minutes before serving and serve with dark chocolate.

 

 

Chestnut Roll Cake

     Ingredients:

  • 4 eggs
  • 1 cup of granulated sugar
  • 1 cup of flour
  • 2 tablespoons of cocoa powder
  • Chestnut cream

 

     For Toppings:

  • 50 ml milk cream
  • 100 g chocolate
  • 2 tablespoons of almonds
  • 1 tablespoon of peanuts

 

     Preparation:

  • For the sponge cake, beat the egg with granulated sugar.
  • Add the flour and cocoa powder and mix well.
  • Bake the mixture you poured on the tray for 10-12 minutes in a preheated oven at 170 degrees.
  • After you take it out of the oven, leave the sponge cake you rolled to cool down for a bit.
  • Open the sponge cake, apply chestnut cream to one corner all the way of the cake, and wrap it.
  • Boil the milk cream until it reaches the boiling point and then add the chocolate and melt it.
  • Pour the chocolate sauce over the roll, and serve with almonds and pistachios.

 

Candied Chestnut

     Ingredients:

  • 1 kg chestnuts
  • 2 cups of sugar
  • 2 cups of water at room temperature

 

     Preparation:

  • Boil the chestnuts until they are soft, and then peel them.
  • Place the water and sugar in a wide-bottomed saucepan and stir until dissolved.
  • Arrange the chestnuts in a single row at the bottom of the pot, then close the lid of the pot.
  • Cook for two hours on low heat, and turn it over occasionally.
