A Cure from Sivas: Madımak Soup

The healing power of nature also finds its place in Sivas's gastronomy. Known for its powerful antioxidant properties and immune-boosting properties, Madımak is frequently used in traditional Sivas dishes. Madımak soup, a healthy addition to the tables of the city, is a delicious example of the rich culinary culture of the city.

To prepare this soup, the Madımak is first carefully washed and then finely chopped. Then, ground meat, tomato paste, fenugreek, and finally bulgur are added to the onions sautéed in a large pot. In fact, in local culture, this soup is called "madımak soup" if the dish has a lot of water; "madımak dish" if the water content is less; and "madımak pilaf" if the bulgur is added.

A Wood-Fired Tradition: Sivas Kebab

The sheep and lambs raised naturally on the fertile plains of Sivas provide you with the most delicious meat. Sivas kebab, traditionally cooked over a wood fire in Anatolia, is one of the delicacies produced by slowly cooking this meat. Also known as "Sebzeli Sivas tandır kebabı" (a vegetable-based tandır kebab), this dish is made especially in June.

To prepare the Sivas kebab, first, lamb and lamb cutlets are marinated in various spices, salt and onions. Then, it's placed on long skewers, a staple of wood-fired ovens. Eggplant, peppers and tomatoes, cut into rounds, are also skewered. This unique flavor, created by carefully cooking the meat and layering it on tandoori bread, is a true delight for both the eye and the palate. If you enjoy meat, you should definitely try the Sivas kebab, cooked over a wood fire.

 

A Tradition Crowned with Sherbet: Hurma Tatlısı (Date Dessert)

After the main course, why not enjoy a delicious dessert like this? Of course you can! But did you know that kalburabastı, a dessert often made at home, is actually the local date dessert of Sivas?

To make the date dessert, first prepare the sherbet. 3 cups of water and 3 cups of granulated sugar are brought to a boil. Lemon juice is added, and the sherbet is brought to a boil a little more. Remove from the heat and let it cool. For the dough, flour, semolina, yogurt, oil, eggs, baking powder and vanilla powder are kneaded until a soft, non-sticky consistency is achieved. Walnut-sized pieces of the dough are shaped into the date shapes that give the dessert its name and slashed with a fork. Bake until golden brown. Immediately after removing from the oven, the desserts are placed in the cooled sherbet and left to sit for a few minutes.
