Chicken and Quinoa Salad

Ingredients:

  • 2 pieces of chicken fillet in cubes
  • 1 avocado
  • 2 tablespoons of quinoa
  • 8 leaves of lettuce
  • 4 cherry tomatoes
  • 2 tablespoons of extra-virgin olive oil
  • Half a lemon
  • A pinch of salt

 

Preparation:

  • Put 2 glasses of water in the pot and boil the chicken.
  • Put 1 cup of water in another pot and boil the quinoa.
  • Wash the lettuce well and separate it with your hands and place it in a serving bowl.
  • Cut the avocado thinly and add it to the lettuce.
  • Cut the cherry tomatoes into quarters and place them in a serving bowl.
  • Drain the cooked chicken and quinoa and let it cool for 10 minutes. Then put it into the serving bowl.
  • In a small bowl, mix lemon, olive oil, salt and drizzle over the salad.

 

Tuna salad

Ingredients:

  • 5-6 lettuce leaves
  • 2-3 sprigs of parsley
  • 4 cherry tomatoes
  • 1 can of small, canned tuna
  • 2 tablespoons of corn
  • 1 tablespoon of extra-virgin olive oil
  • Half a lemon
  • A pinch of salt

    

Preparation:

  • Wash the lettuce and parsley well and chop finely.
  • Wash the tomatoes and cut them in half.
  • Put the greens and tomatoes in a bowl.
  • Strain the excess oil from the tuna, crush it a little with your hands and add it to the bowl.
  • Add the corn to the bowl after draining the water. You can buy corn in canned form that is ready to consume, or you can boil it yourself at home.
  • For the sauce, mix olive oil, salt, and lemon juice in a bowl.
  • Add the sauce to the bowl and mix all the ingredients well.

 

Roasted Vegetable and Grilled Cheese Sandwich

Ingredients:

  • 1 zucchini
  • 1 eggplant
  • 2 roasted peppers
  • 2 sandwich bread
  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • 1 cup of cheddar cheese
  • 2 tablespoons of Parmesan cheese
  • Salt
  • Black Pepper
  • Basil leaves

 

Preparation:

  • Scrape the skin of the zucchini with the help of a knife and peel the skin of the eggplant.
  • Cut the zucchini and eggplant into slices obliquely.
  • Pound the garlic in a mortar.
  • Grate the cheddar cheese.
  • Heat the oil a little by pouring olive oil into the pan.
  • Cook the zucchini and eggplants in the heated pan, for not too long.
  • Cut the sandwich bread in half sideways and drizzle olive oil on the slices.
  • Lightly toast the bread in a pan without oil.
  • Place zucchini and eggplant slices on toasted bread.
  • If possible, slice the peppers you have roasted before and put them on the bread.
  • Spread the crushed garlic on the bread with a brush and then sprinkle with salt and pepper.
  • Place the basil leaves on the bread.
  • Place the cheddar cheese on the bread.
  • Bake the sandwich in the preheated oven at 180 degrees until the cheddar cheese melts.
  • Sprinkle Parmesan cheese on the bread close to being taken out of the oven. Put it back in the oven and cook for another 2 minutes.

 

Egg Salad

Ingredients:

  • 2-3 eggs
  • 2 sprigs of spring onions
  • 2 sprigs of parsley
  • 2 sprigs of fresh mint
  • 2 sprigs of dill
  • Juice of half a lemon
  • 4 tablespoons of extra-virgin olive oil
  • Salt
  • Black Pepper
  • Red pepper flakes

 

Preparation:

  • Place the eggs in a small saucepan, add enough water to cover them and boil them.
  • Peel the shells of the boiled eggs, chop them as you wish and put them on the serving plate.
  • Wash all the greens well and chop them finely. Put the greens on the eggs.
  • Add olive oil, salt, black pepper, and red pepper flakes and mix all the ingredients well.
  • Grilled Zucchini Wraps with Goat Cheese

 

Ingredients:

  • 1 lavash
  • 1 zucchini
  • 1 red pepper
  • Goat Cheese
  • Olive oil
  • Salt
  • Black Pepper

 

Preparation:

  • Scrape the skin of the zucchini with the help of a knife and slice them in a thin and long way.
  • Slice the red peppers like zucchini.
  • Sauté the zucchini and peppers in a pan with olive oil.
  • Place the sautéed vegetables on one side of the lavash.
  • In a bowl, mix olive oil, salt, black pepper, and goat cheese until it gets a thick consistency.
  • Add the mixture to the vegetables and roll the lavash. Enjoy your meal!
