PRACTICAL AND TASTY PICNIC RECIPES THAT WILL ADD PLEASURE TO THE SUMMER SEASON

With summer approaching and the weather getting better, have you started making picnic plans to enjoy nature while spending time with your loved ones? The taste of the picnic comes out when we share the dishes we have prepared with the utmost care with our family and friends. So, what are the indispensable flavors of picnics? Here are practical and delicious recipes that will inspire you while preparing your picnic tables!

 

Kısır (Taboule- Turkish Bulgur Wheat Salad)

Kısır

Ingredients

● 2 cups of fine bulgur wheat

● 2.5 cups of hot water

● 1 onion

● 1.5 tablespoons of tomato paste

● 1 tablespoon of chili paste

● 1 teaspoon of red chili powder

● 1 teaspoon of paprika

● Two tomatoes, green pepper, cucumber

● ½ cup of chopped parsley

● Half a glass of olive oil

● 1 squeezed lemon

● 2 tablespoons of pomegranate syrup

● 1.5 teaspoon of sumac

● Salt

● Fresh mint

 

Preparation

● Transfer the bulgur into a large, lidded glass bowl.

● Pour hot water over the bulgur. Cover the bowl and let the bulgur rest.

● Chop the onions for food and fry them in a suitable pan with 2 tablespoons of olive oil.

● When the onions are soft, add the tomato paste and continue frying until the smell of the tomato paste comes out.

● Add red pepper and chili powder, mix lightly and turn off the stove.

● Chop the tomato, cucumber, and green pepper into small pieces.

● Add the rested and drained bulgur and onion mixture, the remaining olive oil, lemon juice, pomegranate syrup, sumac, and salt.

● Stir until the bulgur turns orange.

● Add tomato, cucumber, green pepper, and parsley and mix again. Serve garnished with fresh mint.

 

Cheese roll pastry

Peynirli Rulo Börek

Ingredients

● 6 pieces of dough

● 500 g crushed white cheese

● ½ cup chopped parsley

● 1.5 cups of milk

● Half a glass of olive oil

● 2 tablespoons of vinegar

● 1 egg yolk

● Sesame

 

Preparation

● First of all, start the oven and set it to 180 degrees.

● Mix the parsley and cheese in a suitable bowl.

● Make a sauce by mixing milk, olive oil, and vinegar in another bowl.

● Unfold a sheet of dough on the table and fold it inward from the edges so that it has the shape of a square.

● Pour a little sauce on the phyllo, spread the sauce with a brush or your hands, and sprinkle with a cheese mortar on top.

● Roll out another sheet of dough on it and repeat the same process, then wrap it in the form of a roll, and divide it into 6-8 equal parts.

● Apply the same operations to the other phyllo sheets in groups of 2.

● Arrange the rolls on the tray you have covered with oiled paper and brush with egg yolk and sprinkle sesame seeds on them.

● Put the pastries in the oven and bake until golden brown.

● Take the cooked pastries out of the oven and let them rest for 10 minutes, then serve.

 

Potato Salad

Patates Salatası

Ingredients

● 5 potatoes

● 1 red onion

● ½ cup chopped parsley

● Half a cup of chopped dill

● 5 tablespoons of olive oil

● 3 tablespoons of vinegar

● 1 squeezed lemon

● 2 cloves of crushed garlic

● 2 tablespoons of capers

● Salt

 

Preparation

● Boil the potatoes in a suitable saucepan and then leave them to cool down on the side.

● Chop the red onion into small pieces.

● In a medium bowl, mix olive oil, vinegar, lemon juice, crushed garlic, and salt.

● Add the chopped onion into the bowl and let it rest for 10 minutes.

● After peeling the warmed potatoes, dice them into small cubes, and put them on a salad plate.

● For the salad dressing, you have to rest it.

● After adding chopped parsley and dill, mix the salad.

● Garnish with capers and serve.

 

Lemonade

Limonata

Ingredients

● 3 lemons

● 1 orange (to give a vibrant color)

● 1 cup of sugar

● 2 liters of cold water

● Fresh mint

 

Preparation

● Wash the lemons and oranges.

● Squeeze, the juice from the orange.

● Peel the skins of the lemons with the help of a knife or a peeler and separate 1-2 pieces from the peels.

● Put the peeled lemons through the rondo.

● Put sugar, orange juice, ground lemons, and peels you separated into a wide and deep bowl and mix them all together.

● Let the mixture rest in the refrigerator for 4 hours.

● Add all of the cold water into the rested mixture and mix.

● Strain the mixture into a bottle or jug with the help of a fine-meshed strainer.

● Serve garnished with lemon slices and fresh mint.

 

Chocolate Chip Muffin

Ingredients

● 4 eggs

● 1.5 cups of sugar

● 1.5 cups of yogurt

● Half a glass of milk

● 1 cup of oil

● 3.5 cups of flour

● 2 packages of baking powder

● 1 package of vanilla

● 1.5 cups of chocolate chips

 

Preparation

● First of all, start the oven and set it to 180 degrees.

● Grease your muffin tins.

● Take the eggs and sugar in a suitable bowl and beat them until they turn white.

● Add yogurt, milk, and oil, and mix.

● Add the baking powder and vanilla and continue mixing.

● In the meantime, slowly add the flour to the mixture while continuing to mix it.

● Beat the muffin batter until it reaches a smooth consistency.

● Divide the mixture evenly into the muffin tins, leaving a rising margin on it.

● Share the chocolate chips on them and bury the particles into the dough with the help of a tablespoon.

● Put the muffins in the oven and bake until they are golden brown.

● Take the muffins out of the oven, which you are sure are cooked by doing the toothpick test, and let them rest for half an hour, then serve.
