During the Coup d’état in 1980, when the economy was disastrous, the municipalities enforced a price limit on baklavas. For baklava makers, this upper limit was s a complete disappointment. When they could not change the situation, they made baklava using milk instead of sorbet, and hazelnuts instead of pistachios. And the name of this dessert became ‘sütlü nuriye’.
The word sütlaç is derived from ‘milky food’. In the Turkish Dialects Dictionary it corresponds to ‘uwa’. The emergence story is quite interesting. A dessert of rice, milk and sugar mixture was prepared for someone with a stomach problem. Because it contains milk, this healing dessert was referred to as 'milky food'. And after a while it evolved into sütlaç. According to the tale sütlaç is a dessert from Central Asia and came to our country with the Silk Road.
Chicken breast is the direct translation of this dessert and was first made by the Romans. Later followed by the Byzantines then the Turks. At the end of the Middle Ages, the making of kavukğöğsü in Europe had decreased. The Turks adopted this dessert and in addition they invented kazandibi. This dessert, which was first made in the mansion and palaces, was spread and adopted by the public later.
Şıllık / Şileki Tatlısı
Şıllık as its modern name, and şileki dessert as its old name, is a dessert unique to Southeastern Anatolia. Over the years, the name has changed as a result of certain deformations. But the taste never changed.
There are many tales about vezir parmağı (Vizier’s fingers). But the most widely known and accepted is the one where acthe vizier and the sultan go on a hunting trip and the vizier accidentally cuts his thumb. Vizier, then, believes this was propitious and says so to the sultan. The next day, sultan runs into a tribe that consumes human flesh. However, the tribe won’t eat the vizier and the sultan. Because the tribe would not eat humans with cuts on their body. Hence, the sultan and vizier survives this ordeal.
Prophet Noah builds a great ship with the commandment of Allah Fills the ship with all kinds of animals. Then, in the tale, Allah floods everywhere and the world is completely destroyed. Only those on board survives. Because they are on a ship for months their supplies lessens. Hence they cook everything that is remaining in a cauldron. The thing cooked by Prophet Noah is referred to as ‘aşure’.
Helva is a dessert of Arab origin. If fact, helva means dessert in Arabic. Helva was first made in the Middle East and the Balkans but with the acceptance of Islam, the dessert became well known with the Arabic culture followed by the Turkish. And it has an important place in the Turkish customs. In instances where a boy is being send of to the mililary or in case of a funeral, helva is always served.
Cezerye is a Mediterranean dessert. From the Arabic cuisine, the name comes from cezer, which means carrot in Arabic. Because cezerye is made from carrot. It is originally from Mersin however sold a lot in Adana. Whilst, it is high in calorie, it is also extremely delicious.
Although, where the name Nevzine comes from, is unknown, it is a traditional Turkish dessert. Flour, olive oil or butter and walnut are made into dough and filled into the tray. Nevzine is served to important guests as well as brides who give birth to a boy.
